SALMON ROLLS MAKES 4 TAKES 20MIN • 4 medium tomatoes, halved, deseeded and diced • ½ cucumber, diced • 1 red onion, finely chopped • 2tbsp fresh coriander leaves, chopped • Juice of ½ lemon • Pinch of salt and freshly ground black pepper • 4 sub rolls, sliced lengthways • 3tbsp mayonnaise • 180g ready-to-eat hot smoked salmon fillets, flaked (see Tip) STEP 1 Combine the tomato, cucumber, onion and coriander in a bowl, then add the lemon juice and toss well.
