WINTER IS THE time to burrow, not entertain. That's many cooks' mantra in the cold months. But I have to disagree: Winter is the season to invite friends over for a real meal. Swedish rock-star chef Magnus Nilsson makes his grandmother's meatballs, perfect for sharing (p. 82); Minnesota blogger Molly Yeh bakes deep-dish spinach quiche (p. 107). I take this time to forage at shops all around New York City; I buy cheese at Murray's and za'atar bread at Kalustyan's and make a big pot of stew (the recipe below is from Anya Fernald, author of the forthcoming book Home Cooked) and a green salad. "I WASN'T SUPPOSED TO TAKE THE GOAT CHEESE parfait off the menu," says Emma Bengtsson, the chef at New York City's Aquavit since 2014. "But I wanted to turn that dessert into something more me—more this decade."
