One of my favorite times of year is back: porch season! I've never had a day that didn't get a little better in the shade of a veranda, with a hint of breeze and a glass of homemade blackberry lemonade (my go-to summer treat) in hand. Allen Smith, and even Mick Jagger have all made regular sojourns to Regina’s 1830s home and bed-and-breakfast, Twin Oaks, for her beguiling company and her famous biscuits, a combination that segued into her latest endeavor: cooking classes. For 44 weeks out of the year, Regina invites travelers from the American Queen and American Duchess riverboats to learn how to bake her signature biscuits. regina’s natchez butter biscuits

MAKES 22 4 cups all-purpose flour¼ cup baking powder¼ cup sugar1¾ cups whole buttermilk, chilled1½ cups cold salted margarine, cut into 3-inch cubes½ cup cold salted butter, cut into ½-inch cubes 1. In the bowl of a stand mixer fitted with the paddle attachment, place flour, baking powder, and sugar; beat at low speed for 15 seconds. Add buttermilk, cold margarine, and cold butter, and beat for 10 seconds. (Do not overmix the dough. There will be large chunks of margarine in the dough—that is a good thing.) 2. Turn out dough onto a floured tea towel, and shape into a long vertical rectangle about 2 inches thick. (The dough will seem rough and messy in the beginning.)
