1 YOU DON’T HAVE TO PULL OUT THE BIG POT. You need 5 to 6 quarts of rolling boiling water to cook 1 pound of pasta. But there are also dishes for which you cook the pasta in very little water, as you would risotto. Drunken spaghetti is a specialty of mine, and it’s made in a deep pan. I cook the pasta partially in water, drain it, and cook it the rest of the way in red wine. 2 DRIED IS JUST FINE. I do occasionally make homemade gnocchi or cavatelli, like when I’m in Italy. BAKED PESTO GNOCCHI WITH TUNA SERVES 4 10 oz. fresh baby spinach1 lb. refrigerated or frozen gnocchi2 5-oz. cans tuna packed in water, drained and flaked with a fork½ cup refrigerated pestoKosher salt and pepper¼ of a loaf ciabatta, roughly torn½ cup grated Parmesan Preheat the oven to 375°. Bring a large pot of water to a boil. Salt the boiling water. Stir in the spinach and cook until just wilted, about 30 seconds. Using a slotted spoon, transfer the spinach to a large colander, pressing out as much liquid as possible. Transfer to a 9×13-inch baking dish. Return the water to a boil.
