golden christmas pudding

We reckon there’s nothing better than a steaming hot, golden pudding, drizzled in decadent butterscotch sauce, to provide that pleasing, end of dinner satisfaction. Ingredients: Pudding: 350 grams Westgold butter, softened350 grams caster sugar5 eggs, beaten2 oranges, zest only2 lemons, zest only¼ cup brandy150 grams fresh white breadcrumbs150 grams self-raising flour350 grams mixture of dried apricots, peaches, pears, golden sultanas, figs Extra whole dried fruit for bottom of bowl3 tablespoons golden syrupCrushed hazelnuts to serve Brandy Butterscotch Sauce: 1 cup brown sugar2 teaspoons vanilla⅓ cup cream50 grams Westgold butterBrandy to taste Method: Prepare the 20cm pudding bowl by greasing and lining with baking paper. Weronika Elantkowska Events and digital coordinator @weroelantkowska Weronika – ‘Ronnie’ to the team – is originally from Poznan, Poland, and if you were to meet her in person, she could shoot the breeze with you in any of five languages. Because as well as being a digital whizz (and a lifesaver for dish’s digi offerings during lockdown), she speaks Spanish, German, English, Polish and Greek. In her home country, she did a Masters in Linguistics, then a postgrad diploma in Communication/PR at AUT in Auckland. Cherries have long been admired for their seductive beauty, featuring in ancient and modern works of art, and in photographs, books and magazines, but it’s their rich, sweet, juicy flesh that gets cherry lovers rhapsodising. I love the way the glossy, taut skin of a perfect cherry gently cracks as you bite into it, and that rush of deep red juice that rises to the surface of the flesh just before you pop the rest of the cherry in your mouth (hopefully, remembering to expel the cherry stone after!).
