welcome to april

‘It’s important to build layers of flavour in dishes, but it’s equally important to show restraint and let ingredients sing for themselves,’ says Tom Kerridge, whose five-ingredient recipes bring out the best in fruit and veg and allow British beef and smoked fish to shine (p78). This issue is a celebration of spring, and what better way to welcome the season than to cook with the newest produce, such as asparagus, radishes and watercress, to name three favourites (p90). Eggs also play a starring role, from Diana Henry’s genius ‘jammy’ version (p86) and Ernestina Agyei’s garden eggs (p123), to shakshuka-style full English (p98) and the richest custard tart (p120). And, if you’re looking for sunny baking inspiration, try making Cassie Best’s schooldays sprinkle sponge (p58) or the magnificent snickerdoodles (p66) –…

this is your good food

your letters I’ve been absolutely overjoyed with the changes you’ve made as a result of Black Lives Matter. Getting the real recipes by people who have not only visited the place of origin of a dish but actually grown up in a family where it’s eaten is just wonderful. BLM has also made me aware of how white chefs’ adaptations of world recipes means that chefs of other backgrounds get less exposure in food magazines or on TV, meaning they get fewer customers to their restaurants and have a harder time getting cookbooks published and sold. I’m so happy you’ve decided to do something about that, but more importantly, you’re contributing to a better and fairer world. 1 RETRO BIRTHDAY CAKES Feeling nostalgic? We are, because we’ve spotted the latest 80s-style trends in celebration cakes. Think hundreds and thousands, candles in primary colours (Dr Oetker), swags of intricate piping punctuated by glacé cherries (Lily Vanilli) or your favourite dinosaur depicted in icing (Waitrose & Partners). Give the retro-look a try at home with our sprinkle sponge recipe on page 58. 2 MORE CHEESE PLEASE! Creamy, salty feta has always been popular with our readers (you’ll find our recipe collection on, but recently a viral online recipe video has seen sales of the tangy Greek cheese booming in supermarkets. The recipe is simple – just bake a block of feta in a dish along with cherry tomatoes, garlic, basil and plenty of olive oil until soft, then toss through cooked…

raising spirits on the road

Food can bring us together in even the most unusual circumstances, and after a shout-out on our Good Food Together Facebook group, we wanted to highlight someone who’s bringing joy to the community by documenting his meals on-the-go. Member Kirsty wrote to us about truck driver Robert Booth from Dover, who has been reading Good Food magazine for 15 years. ‘He posts about his adventures and shares the culinary delights he conjures up in his cab. He keeps us all laughing,’ she told us. Although Robert spends five days a week away from home, working long hours and often sleeping in his truck, he’s become something of a celebrity on the page by posting daily pictures of what he’s cooking alongside uplifting stories about his life on the road. ‘In the…
