Massimo Bottura’s JAPANESE-STYLE SOUP Inspired by Chef Takahiko Kondo—his kitchen ally at the three-Michelin-starred Osteria Francescana (osteriafrancescana.it)—Massimo Bottura believes that a Japanese-style soup is apt for a hearty family dinner. To make it, keep a vegetable/meat broth ready beforehand and let it simmer on low flame. Into this, dip a tea infuser with some lapsang souchong and elderflower. Sauté garlic, leeks, carrots, fennel, celery, and ginger in olive oil, in a pot. In another, boil black lentils. Once the vegetables are lightly sautéed, add the boiled lentils and some broth and let them boil on low flame. Add raw broccoli and zucchini to the pot. How did you get stranded? Before COVID-19 was declared a pandemic, I had left India for Chile, where I was supposed to lead a group of travellers. I run a travel company called Girl With The Backpack (girlwiththebackpack.com). There wasn’t a single case in South America at the time. To get to Chile, I flew Mumbai – Dubai – Paris – Atlanta – Santiago, while the route back was Santiago – Sao Paulo – Addis Ababa – Mumbai. Literally around the world in 10 days!
