INGREDIENTS MAKES 12 SQUARES Crust 1½ cups all-purpose flour1¼ cups cold unsalted butter, cubed½ cup icing sugar½ tsp salt Lemon Pudding 1 cup granulated sugar¼ cup cornstarch1¼ cups 35% whipping cream1 cup 2% milk3 egg yolks2 tsp grated lemon zest½ cup lemon juice2 tbsp unsalted butter, cubed Cream Cheese Filling 8 oz (225 g) cream cheese, at room temperature½ cup sifted icing sugar¼ cup 35% whipping cream2 tsp grated lemon zest1½ tsp vanilla Meringue ¾ cup granulated sugar3 egg whites, at room temperature DIRECTIONS Crust Line 8-inch square cake pan with enough parchment paper to leave overhang on 2 sides; set aside. In food processor, pulse together flour, butter, icing sugar and salt until ball starts to form. Press mixture evenly into bottom of prepared pan. Refrigerate for 30 minutes. Preheat oven to 325°F.
