Nettie Jo’s Carrot Muffins Makes 12 muffins From Wine and Punishment: A Literary Pub Mystery, Book 1 By Sarah Fox 1 cup unsweetened applesauce ½ cup granulated sugar 1/3 cup vegetable oil 3 large eggs 1½ cups all-purpose flour 2½ teaspoons baking powder 1½ teaspoons baking soda 1½ teaspoons ground cinnamon ½ teaspoon salt 2 cups grated carrots • Preheat oven to 420°. Line a 12-well muffin pan with paper liners.• Mix together applesauce, sugar, and oil.
