Carrot, coconut and chilli soup I first made this recipe using frozen chunks of butternut squash, which was delicious, but using carrots makes it far more economical without compromising on the flavour or end result. Should you find yourself in possession of a squash, however, feel free to use that instead in homage to the original. Standing in Kaye Memorial Gardens, I shook my head sadly as I read the 50 names of the people who’d died in the Summerland disaster. Alongside the fatalities, another 100 people had been left injured… including me.
