Ingrdients:
2 cloves of garlic, ½ red chilli, 2cm piece of ginger, ½ a bunch of coriander (15g)
¼ cucumber, 2 limes 1 tbsp. (15ml) sesame oil, 300g baby potatoes, 160g green beans, 1 green teabag, optional, 225g salmon fillet, skin on, scaled, pin-boned
1 tbsp. (15ml) sesame seeds, Groundnut oil, 2 spring onions, Salt and pepper, to taste
Method: Peel and finely slice the garlic and red chilli. Next, peel and finely grate the ginger. Pick the leaves from the fresh coriander and finely slice the stalks. Scrape the skin of the cucumber with a fork to create grooves, then halve it lengthways and scoop out the seeds. Slice it into half-moons, place in a bowl, squeeze over the lime juice.
