cooking with kids It’s been so rewarding seeing how many of you are keeping the kids busy in the kitchen during breaks from home-schooling. fruit and veg can freeze you and how to do it 1 ONIONS Chop or slice and freeze on baking trays using the ‘open freeze’ method (see dos and don’ts, right). Once solid, portion out in freezer bags. You can also fry onions to freeze in batches. 2 BROCCOLI Cut into florets and cook until al dente. Leave to cool, then spread over a baking tray and freeze. Once frozen solid, tip into a freezer bag. 3 PEAS OR RUNNER, FRENCH, DWARF AND BROAD BEANS Boil by the handful for 30 seconds at a time to prevent browning. harissa

What is it Harissa is a North African chilli paste, thought to originate in Tunisia. A basic harissa is made from chillies and oil, but other herbs and spices like paprika and garlic are often added. How it got its name The name comes from Arabic ‘harasa’ meaning ‘to pound’, as it’s made by pounding chillies into a paste. Uses A real storecupboard hero, harissa offers a simple way to pack a lot of flavour into a dish. Use it in marinades for meat, fish or veg before roasting, grilling or barbecuing, mix a little with olive oil and a splash of vinegar to make a salad dressing, or add to lamb mince to make koftas or spice up burgers.
