About a year ago I noticed my slow cooker was in pretty shabby shape. The lid had broken and I (being thrifty) had corrected the problem with duct tape. Not cool. Right about that time, we (the Better Homes & Gardens editors and Test Kitchen staff) spent some time testing multicookers with both slow-cooking and faster pressure-cooking functions. I considered the options and finally purchased one of my very own—I love it. So when it came time to plan this magazine, we created a whole new collection of tender braised recipes for pressure cookers (page 34). 1. HOW THEY WORK Surrounding coils indirectly transfer heat to the inner crock of a low-fuss slow cooker. Pressure and steam build in the cooker, and the juices that flow from the ingredients— especially meat—are trapped by that pressure. This results in moist, tender meat and veggies without adding any fat (or its extra calories). 2. THE HALF-FULL RULE Normally we recommend filling a slow cooker at least half full for optimum cooking. However, once we stretched the recipes beyond pot roast and chili, the old rule came into question—think cakes (page 86) and monkey bread (page 19). WHAT IS DULCE DE LECHE? In Spanish, dulce de leche means “sweet of milk.” It’s simply sweetened milk that has been heated until it became thick and caramelized. This recipe starts with sweetened condensed milk, making the process simple and foolproof. DIY DULCE DE LECHE PREP 10 minutes SLOW COOK 10 to 11 hours (low) 2 14-oz. cans sweetened condensed milk 1. Divide milk among four half-pint canning jars. Adjust lids and screw bands. Place in a 4-qt. round slow cooker with straight sides. Add water to cover jars by 1 inch.
