But you might have noticed that the routine is changing. More restaurants than ever are eliminating the tip line and replacing it with a gratuityincluded format. We take a closer look. Why now? 1 Minimum wage hikes in some states. Due to mandated minimum wage increases, restaurants that were already operating on razorthin margins now must pay servers and cooks more, an increase that some simply can’t sustain.
