Q/ Do you need to wash chicken before cooking it? A/ Salmonella and Campylobacter are disease-causing pathogens that are mostly associated with raw and undercooked chicken and other poultry. In 2017, Salmonella and Campylobacter caused four to five times higher incidences of infection than the next pathogen commonly transmitted through food, so food safety around these items is key. We are taught to wash our foods well before eating them, and this remains an excellent food-safety practice. But current recommended practices dictate not washing raw chicken before cooking because the splashes that occur during washing may transfer poultry pathogens to other foods and surfaces, increasing the chances for cross-contamination. Wash all the surfaces and utensils that contacted the poultry well. Keep raw chicken refrigerated until ready to use, and cook to 165ºF…
