Combo Idea 1. pnb + mung bean sprouts + honey Start with a thick layer of peanut butter. (It can be smooth or crunchy, salted or unsalted—whatever!) Add a handful of mung bean sprouts and then drizzle with honey. Don’t drown it—just enough to give it a little sweetness. Combo Idea 2. herby guacamole with grated cheddar cheese + carrot In a small bowl, mash half an avocado and then stir through a small handful of your fave chopped herbs and juice from a lemon quarter. Season with salt and pepper. Spread the guacamole across your bread, and then top with grated carrot and cheddar cheese. CINNAMON + CARDAMOM BUNS Makes 15-20 buns For the buns: • 2 1/2 tsp instant yeast• 1 tsp ground cardamom• 1/4 tsp sea salt• 1 cup milk• 70g / 2.5oz salted butter• 1/4 cup maple syrup• 3 cups white spelt flour For the filling: • 3 tbsp maple syrup• 50g / 1.8oz salted butter• 1 tbsp ground cinnamon• 1/2 tsp ground cardamom For the egg wash + topping: • 1 egg, lightly beaten• 2 tbsp raw sugar 1. Add ground cardamom, salt and yeast to a large bowl. 2. In a small saucepan, melt butter with milk and maple syrup to a lukewarm temperature. 3. Pour melted butter over the yeast and stir to dissolve. 4. Sift 2 cups of spelt flour into the yeast mix to form a dough. 5. Slowly add the rest of the flour, and knead until soft…

NUT-FREE CHOC-COCONUT SUNBUTTER Makes 2 cups • 2 cups sunflower seeds• 4 tbsp coconut oil• 3 tbsp cacao powder• 1 tbsp vanilla paste• 4 tbsp maple syrup• 1 tsp ground cinnamon• pinch of salt 1. Lightly toast the sunflower seeds in a pan over low heat until the seeds begin to pop. 2. Transfer the seeds to a food processor, and whiz on high speed until you have a fine powder. 3. Add the coconut oil, one tablespoon at a time, and continue to blend on high speed for 5–10 minutes or until you have a smooth paste. 4. Add the cacao powder, vanilla, maple syrup, cinnamon and salt to the blender and blend until well combined. 5. Store in an airtight container in the pantry for up to 2 weeks. ORANGE, RICOTTA + POPPY SEED PANCAKES Serves 2 • 1 cup ricotta cheese • 1/4 cup caster sugar • 2 eggs • zest from 1 orange, finely grated • 1/8 cup poppy seeds • 1/3 cup plain flour • 2–3 tbsp oil or butter for frying For serving: • honey • walnut halves 1. In a large mixing bowl, whisk together ricotta, sugar, eggs, orange zest and poppy seeds. 2. Fold in the flour and mix until just combined. 3. Heat the oil (or butter) in a large, heavy-based frying pan. With a large kitchen spoon, spoon in small rounds of batter, using the back of the spoon to flatten. You will need to work in batches of approximately 3 at a time, or whatever fits comfortably in your pan. 4. Over medium heat, fry gently until golden on one side, and then flip over…
