Early summer ushers in warmer days, lush lawns, and beautiful blooms, all perfect backdrops for afternoon tea outdoors. Whether to celebrate a special occasion or a cherished friendship, teatime al fresco heightens the senses. A tea table placed outside doesn’t mean the fine china must remain indoors—quite the contrary, as several of our afternoon-tea menus in this issue and “The Tea Diaries” column on page 51 will demonstrate. And while we show hot tea with our tea parties and pairings, iced tea would certainly be refreshing instead if the temperatures are just a bit balmy. After all, June is National Iced Tea Month. Sally’s Chocolate Cream Pie Makes 8 servings 6 large egg yolks¾ cup granulated sugar2 tablespoons cornstarch3 cups half-and-half1 cup finely chopped mini semisweet chocolate chips¼ cup salted butter1 (8- or 9-inch) prepared chocolate wafer piecrust1½ cups heavy whipping cream¼ cup confectioners’ sugar½ teaspoon vanilla extractGarnish: shaved chocolate* • Place egg yolks in a large saucepan, off heat. Whisk yolks until well combined. Add sugar and cornstarch. Whisk together, off heat, until well incorporated. Over medium-high heat, slowly add half-and-half, whisking constantly. Whisk and cook until mixture thickens slightly, 3 to 4 minutes. Stirring constantly, boil mixture for 3 minutes. Add chocolate and butter, whisking constantly.
