welcome to the air fryer revolution

I love my Instant Pot. I really do. So when my son Chris suggested we get an air fryer, I told him, “Fine. But you try it out. It’s just a fancified convection oven.” Wow, did he show me otherwise. We’ve since both fallen in love with our little air-frying guy. Even my wife, Ginger, likes it, and she’s not a gadget fan. It’s healthier (virtually no oil!), gets food crispy on the outside and tender on the inside, uses just one pan (the fryer drawer), and doesn’t heat up the kitchen. Best of all for Ginger, it means Chris and I are the ones making dinner. Easy to use? Yes. Easy to find recipes? Not so much. As in early days of electric multicookers, there aren’t many recipes to choose from.…

air-fried fame

We’re betting this is one fad that won’t fade. It’s because air fryers deliver satisfying, crispy crunch with only teaspoons of oil (so lots less calories). And because they do a lot more than fry. The recipes in this special issue demonstrate the air fryer’s versatility. It fries (obviously), bakes, broils, grills, or roasts anything from appetizers to desserts, including spring rolls, steak or chicken, and donuts. It’s also fast (preheats in minutes), convenient (no extra pans), and easier to clean than an oven. So whether you’ve recently gotten an air fryer or are wondering if it’s worth buying one, we’ve got you covered. 69% The increase in air fryer sales from 2017 to 2018. Since 2017, more than 10 million have been sold in the United States. And that number is only…

choosing an air fryer

1. SIZE Air fryers come in a wide range of sizes, from 1 quart for singles to 16 quarts for party-throwers. So how many people on average do you need to feed? Also, the bigger the fryer basket, the fewer batches you need to cook, and the faster dinner gets to the table. (Caveat: The bigger the fryer, the more counter space they consume. See No. 3 below.) 2. FEATURES & PRICE There isn’t much difference between air fryers in terms of how well they cook. As with a new car, it’s the options that push up the price. Less expensive models often have dials for temperature and cooking time. Higher-end models have digital displays and presets that allow you to chose the precise cooking temperature and time. 3. SPACE If you don’t have much…

more cool ways to use your air fryer

AIR-FRY all year long 1. USE IT ON VACATION Many home cooks find that the air fryer’s size and portability make it perfect to take on vacations at beach or lake houses, or deep-in-the-woods cabins. 2. USE IT TO KEEP COOL In the dog days of summer, no one wants to turn on the oven and heat up the house. Use your air fryer instead to prepare dinner and even bake tempting desserts—all while staying cool in the kitchen. 3. USE IT FOR HAPPIER HOLIDAYS Working with one oven? That can make it hard or even downright impossible to prepare a turkey, all the sides, and dessert. Enlist your air fryer to take some of the load. You can make many holiday favorites—sweet potatoes to Brussels sprouts—in the air fryer. It’s also perfect for party appetizers…
