GRILLED EGGPLANT & GREEN ONION SALAD MAKES 4 SERVINGS HANDS-ON TIME 20 MINUTES TOTAL TIME 30 MINUTES 1 small eggplant, cut in ½-inch thick slices4 green onions2 pita breads3 tbsp olive oil2 tsp za’atar2 cups chopped romaine lettuce2 cups torn red leaf lettuce3 mini cucumbers, sliced1 ½ cups grape tomatoes, halvedMiddle Eastern-Style Dressing (recipe, this page)salt and pepper¼ cup chopped fresh mint¼ cup chopped fresh flat-leaf parsley Preheat barbecue to mediumhigh heat (about 375°F); grease grill.
