MEGA MUSHROOM & BACON BURGER
SERVES 4
• 4 large portobello or large field mushrooms l f m o
• 2tbsp olive oil
• 8 slices streaky bacon
• 4 crusty ciabatta rolls, halved
• ½ small lettuce, shredded
• 2 large tomatoes, sliced
STEP 1 Prepare your barbecue (or griddle pan), until hot. Brush the mushrooms with half the oil, then season with salt and black pepper. Cook on the barbecue (or griddle pan) for 8-10 mins, turning once, until browned and tender when pricked with a fork. Transfer to a plate, gill side down, then leave for 5 mins.
STEP 2 Grill or fry the streaky bacon with the remaining oil, until crispy and brown. Set aside.
