RECIPE KNOW-HOW: We use Australian standard measures. In liquid measures, 250ml = 1 cup. Dry ingredients are measured in level 1 cup, 1/2 cup, 1/3 cup and 1/4 cup measures. 1 tablespoon = 20ml (note NZ, US and UK tablespoon = 15ml). 1 teaspoon = 5ml. We use 59-60g eggs. CORN FRITTERS WITH ANTIPASTO SALAD SERVES 4 PREP 10 MINUTES COOK 20 MINUTES Vegetable oil, for deep-frying1½ cups self-raising flour½ teaspoon baking powder½ teaspoon sea salt flakes2/3 cup grated cheddar410g can corn kernels, drained, rinsed1 cup buttermilk1 egg, lightly beaten120g packet baby leaf salad mix with sweet carrot120g tub antipasto mix, undrained (see notes)Lemon wedges, to serve 1 Pour enough vegetable oil into a large saucepan to reach halfway up side of pan. Heat over medium-high heat. 2 Meanwhile, combine flour, baking powder, salt, cheese and corn in a large bowl. Make a well in the centre. Add buttermilk and egg. Season with pepper. Mix to combine. 1 BROWNING BASICS: Browning meat and vegetables before cooking them in the slow cooker caramelises the ingredients, releasing their flavours. 2 SUPER BOWLS: Some slow-cooker models have a removable sear bowl, so you can brown on the stovetop before transferring the bowl back to the slow cooker. If your slow cooker doesn’t have this option, you can use a frying pan instead. 3 SPICE IT UP: When adding dried spices or spice mixes, it’s best to cook them at the same time as you’re browning and caramelising your ingredients.
