To make a Pomegranate Mojito: In a pitcher, muddle or mash together 2⁄3 cup of mint leaves, 1⁄4 cup of granulated sugar and 2 Tbs. of fresh lime juice. Add 1 cup of rum and 1 cup of pomegranate juice. Chill until ready to serve. Divide rum-pomegranate mixture evenly among 4 ice-filled glasses. Top glasses with chilled club soda.
