Previous to earning its reputation around the world as a uniquely American spirit, and capturing our fancy as an elixir that seems to flow freely from the rolling hills and limestone streams of Kentucky and Tennessee, bourbon sprang from a unique mix of peoples, politics, and bold invention. Nowadays, when consumers spot the words “straight bourbon” on a bottle distilled in America, they know that along with ingredient and aging requirements, the liquid therein contains no additives other than pure water. Back in the mid-1800s, though, things were a bit, well, different. Drinkers were developing a preference for the taste of whiskey aged in charred barrels, a process that requires time. Not all distillers and purveyors possessed the required patience. Instead, “rectifiers” would doctor raw or young spirit with tobacco, iodine, and other dubious substances in order to make it appear older or just to boost profits. One of the newest inductees into the Kentucky Bourbon Hall of Fame is the first woman to own and operate a major distillery, a compelling story that had faded into obscurity until recently coming to light. Born in Kentucky in 1859, Mary Murphy was just 15 when she married John Dowling, a fellow Irish Catholic more than twice her age. When they wed, John Dowling was an investor in the Waterfill & Frazier Distillery and a cooperage in Lawrenceburg, Ky. For centuries, coopers, the skilled craftsmen who make barrels, have shaped both the literal and figurative vessel for aging and transporting whiskey. Today, cooperages remain vital to bourbon territory distilleries, continuing a tradition about which even many bourbon fans know little. When Kentucky pioneers began distilling surplus corn into whiskey in the 1700s, they looked to wooden barrels—then the standard for transport and storage of many goods—to age and carry their spirits. Cooperages soon became cornerstones of such river towns as Louisville and burgeoning cities like Lexington, with coopers practicing a demanding mix of woodcraft and ingenuity handed down across generations. Bourbon production has been a part of Louisville’s story almost since the city was chartered in 1780. (After all, somebody has to fill the 125,000 mint juleps served at Churchill Downs over Kentucky Derby weekend.)
