Strawberry and Elderflower Cream Meringue Cake There are a few tricks to making a good meringue. First, make sure the bowl is clean or, more specifically, free from any grease or fat. Rubbing a slice of lemon or a bit of white wine vinegar inside the bowl normally does the trick. Second, whisk the egg whites to soft peaks before you start adding the sugar. And third, add the sugar slowly, a tablespoon at a time, and make sure it’s completely dissolved before you add the next tablespoon.
